The best thank you I’ve ever received

Now that I’m getting back to work for a while, I’m once again relying on my slow cooker. It’s my way of making sure Kellan and Michael eat somewhat decently while I’m away. Otherwise, left to their own devices, there’s a fair amount of restaurant take-out and macaroni & cheese that gets served at the dinner table. Way more than I would like, anyway.
I happened to come across a yummy slow cooker recipe for Tofu and Spinach in Peanut-Coconut Sauce, which is then served over rice. I’ve had a lot of slow cooker failures — I won’t lie — but the flavor profile sounded like a surefire hit for us.
So on Wednesday night, before I even got the full report on the success of the meal, I laid eyes on two divinely wonderful and heart melting things. First of all, Michael was cleaning up the kitchen. There’s nothing that depresses me more than walking through the door at 10:30 pm to find the kitchen sink teeming with dirty dishes. But on this night, Michael was taking care of the whole mess. Phew. And then….then, I spotted this:

Here’s the translation according to Michael:
“Thanks for dinner, Mommy. It was so, so, yummy. It was great. It was so, so, so yummy. Love, Kellan.”
It’s a miracle I’m still alive right now. My heart has melted into a big puddle on the floor.

I love my slow cooker. It can be hard to find vegetairan slow cooker recipes. I have a bunch of healthy ones on my blog. Where did you find the recipe you made?
Awww. What a sweetie pie. Both of them. I know what you mean about that dirty sink full of dishes at the end of a long day.
Recipe please? This month of meat free eating family style is a challenge. I’m sick of the giant pot of beans we boiled last weekend…

And I bet you did melt at that note! (and Michael doing dishes–I tell Jamison all the time there is NOTHING that turns me on more than him doing housework of any sort…and I mean it!)
For Heather: we recently gave up meat and dairy but there are some great vegan recipes out there (thank god because beans give me horrendous gas) My three new fave cookbooks are “The Conscious Cook”, “Nonna’s Italian Kitchen”, and “Vive le Vegan!”. I found a good website too called the Post Punk Kitchen. Oh, and those girls from that site have a great vegan cookie book too…
I agree, one of the best “presents” Billy can give me is picking up after the kids or cleaning the kitchen. It rarely happens but when it does, it makes my day. That note from Kellan is so precious! He is going to make such a good big brother.
Oh, wow. That is so sweet. It’s doesn’t take much for our kids to give us some perspective. What a sweetheart!
