Thanksgiving recipes for a vegetarian table

Are you ready for Thanksgiving yet?
I’m not. I’ve thought about one or two dishes, but that’s about it. Luckily, I’m not hosting at my house, so I’m not too concerned about the lack of forethought. But it’s time to get the talk going with my mom and mother-in-law to see what our plan of attack will be this year.
Maybe your family does Thanksgiving the same way every year — same location, same menu. In my family, we’ve had to be fairly creative in recent years. There are several different diet restrictions to accommodate (including vegetarianism, allergies, and a gluten-free diet), varying place settings at the table, and sometimes — like last year — two Thanksgiving dinners. (I had to work the holiday last year, so I hosted a Thanksgiving-esque dinner the day after.) So for us, the holiday is usually a little bit different than the year before, and the year before.
So if you’re anything like me, and you’re trying to put together the menu plan in your head, I have a few ideas to share. The following recipes would all make a nice addition to a Thanksgiving table, not just a vegetarian one! Oh, and just for the record, I do not eat Tofurky. In case you’re wondering.
Grilled Apples and Sweet Potatoes
(If you have a lack of oven space, I think Grilled Apples and Sweet Potatoes a great side dish option! Just send the loud, obnoxious relative outside to oversee them. Ha!)
Yam and Ginger Soup (a.k.a. The Triple Y)

I too have a wide variety of diets to consider - Kosher, vegeterian, & onion allergy being the main ones.
I still keep it fairly traditional (& I try to keep in on the light side - calorie wise)
brussels sprouts - roasted
asparagus - roasted
boiled white & sweet potatoes
stuffing two ways (one with out onions - or stock, since ALL stocks have onion & starts with plain bread cubes)
cranberry sauce
& Since my son’s first birthday lands on the holiday, chocolate cupcakes!
(I have an acorn squash, so I might also do a dish that uses acorn squash, apples & cranberries)
Officially, I can spell - I just can’t type.

Ooh, thanks for sharing! As you know, I’m veg, too, so I’m always required to bring the meatless side dish. Which of the soups is your favorite? They all sound delicious!
I’m now obsessed with making pumpkin smoothies! I can’t wait to try them and try some of your other recipes here.
