Surprisingly healthy stuffed waffles

Surprise the kids! There's a sweet treat hidden inside these waffles. They'll never even realize they're eating whole wheat and major Omega 3s!
I am having a love affair with my waffle iron. It’s a tried-and-true old Black and Decker passed down to me from my mother-in-law. Because the waffle iron and I are getting along so well when it comes to traditional waffles, I thought I’d try something quite untraditional — stuffed waffles.
I usually try to make our breakfast breads super healthy by using whole wheat flour instead of white, and by throwing in spoonfuls of ground flaxseed. Don’t get me wrong — this recipe has all that — but I decided to break my own uber-healthy rules just a little bit by adding chocolate. Mmm.
Stuffed Waffles
- 1 1/4 cups whole wheat flour
- 2 tablespoons ground flaxseed (wheat germ would also be great)
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 pinch ground nutmeg
- 1 1/2 cup milk
- 1 egg
- 1 ripe banana, sliced
- Small handful chocolate chips
- Mix flour, ground flaxseed, baking powder, salt and nutmeg in a large bowl.
- Add milk and egg to dry ingredients. Mix well.
- Add about 2 tablespoons batter to 1 waffle square. Top with 3 slices of banana and 6-7 chocolate chips. Spoon another 2 tablespoons of batter on top. Repeat for each waffle square.
- Cook until golden and top with syrup, whipped cream, chocolate sauce or other favorite condiment.
