Out of eggs? Here’s the solution

Just in case you haven’t noticed yet, I’m a big fan of making pancakes and waffles on the weekends. But I’m also notorious for forgetting at least one thing on the grocery list every time I go. Which means I’ll often find myself completely out of eggs while whipping up batter in my PJ’s on a Saturday morning.
I could run next door to the neighbors’ house to borrow a couple, but my son’s big morning appetite usually has me racing against the clock anyway. So here’s my quick and easy fix: cornstarch. Yep, just two tablespoons of this little-used kitchen staple and you’re back in the breakfast game.
If you ever find yourself eggless while making bread or a cake, here are a couple more egg substitutes:
- Mix together one tablespoon of ground flax meal and 3 tablespoons water, add to recipe
- Mash a banana, add to recipe
Either one of those options will make your baked product light and fluffy. No eggs required.
