Huckleberry Pizza

Huckleberry Pizza: how can you resist?

I thought I found Huckleberry Heaven up in the mountains this weekend. But once I got the delectable little berries into my kitchen, I discovered Huckleberry Nirvana. Here’s why: Huckleberry Pizza.

How do I love this recipe? Let me count the ways.

  1. It is DELICIOUS.
  2. Huckleberry flavor is the star of the show.
  3. It is full of antioxidants! Wild mountain huckleberries and dark chocolate are a win-win.

This recipe is so delightful that if you’re not a fan of huckleberry picking or you don’t have access to the mountains, you need to find somebody who will pick them for you or buy some online. I’m just sayin’. This is goooood.

Huckleberry Pizza

  • 1 cup fresh huckleberries
  • 2 squares of dark chocolate (approx. 1 inch squares)
  • 3 heaping tablespoons ricotta cheese
  • 2 1/2 tablespoons honey
  • Your favorite pizza crust

I believe a thin crust pizza crust is the way to go here, so that breadiness doesn’t overtake the huckleberry flavor. Also, I really like the flavor of a whole wheat crust with this recipe, because it has a subtle, nutty taste. (I used the same pizza crust mentioned in my Grilled Pizza recipe.)

  1. Preheat the oven to 450 degrees.
  2. Mix the ricotta cheese with the honey.
  3. Spread a thin layer of olive oil over the entire pizza crust, including the edges.
  4. Spread the ricotta mixture on top of the crust.
  5. Hold the chocolate with a napkin or paper towel and grate over the top of the crust with a Microplane Grater/Zester. (You can use a regular grater, but I really like the finely grated chocolate for this recipe.)
  6. Grate about one square of the chocolate over the pizza, and eat the leftover square. (Don’t skip this part of the recipe — it is critical! You will need something to sustain you as you wait what seems like EONS for the pizza to bake.)
  7. Sprinkle the huckleberries liberally on top of the chocolate and bake for 10-12 minutes.

In a rare moment of weakness, I allowed this pizza to be served at the dinner table. I reasoned that we were getting good doses of protein from the ricotta, antioxidants from the berries and chocolate, and whole wheat goodness from the crust.

Then my tastebuds took over and I pushed all reason aside. Forget healthiness. Loving something this much can’t be wrong.

Did I mention I love huckleberries?

    broccoli cauliflower tacos!

    1-2 Cups of Steamed Broccoli and Cauliflower (depending on how much you want to eat)
    2-3 Burrito Wraps (Again, depending on how many)
    1/2 cup Shredded cheddar
    Chopped Onions
    1Tbs Mayonnaise (miracle whip won’t work!)

    Okay, warm up the wraps one at a time.
    Spread mayo in a nice 3″-4″ diameter circle or so
    Add your veggies
    Add your onions
    Add your cheese
    Salt and Pepper to taste

    Then sometimes I add a sprinkle of garlic!

    Then VOILA! A lunch/dinner that you will be craving! I eat 2 of them sometimes. :)

    Phil and Hadley came home from the mountains today with a bag full of fresh huckleberries. I’ll have to present this recipe as an option for how to use them best. They are a treasure indeed!

    I miss huckleberries, and well fresh fruits and berries of any kind. Not too much picking options in Arizona, sigh. I may have to try the recipie with blueberries instead, think that would work?
