Huckleberry Pizza with Endive and Arugula

You saw my previous Huckleberry Pizza post, right? Well, I just couldn’t help but wonder how huckleberries would fare on a more savory pizza. So of course, I just had to try it.
Turns out, huckleberries are quite fantastic with some leafy greens and parmesan. The huckleberries provide a nice, zingy tartness and the slight saltiness of the parmesan is the perfect counterpoint. This is a tasty, filling pizza that will have you going back for seconds. And thirds. Maybe even fourths.
I would like to note that this pizza requires more endive than arugula, because it is more mellow. Too much arugula, and you’ll wind up with too much peppery flavor, which will overwhelm the huckleberries. And that, my friends, would be a huckleberry sin. You don’t want to go to Huckleberry Hell, do you? Huckleberry Heaven is much nicer. Trust me.
Huckleberry Pizza with Endive and Arugula
- 3/4 cup fresh huckleberries
- Large handful of endive leaves (I used French curly)
- 8-10 arugula leaves
- 1/2 cup parmesan flakes
- Sea salt
- Extra virgin olive oil
- Balsamic vinegar
- Your favorite pizza crust recipe (as with the previous Huckleberry Pizza, I used the crust from my favorite Grilled Pizza recipe.)
- Preheat the oven to 450 degrees.
- Clean and roughly chop the endive and arugula. Make sure the huckleberries are rinsed, if you haven’t cleaned them already.
- Cover the pizza crust with a thin layer of olive oil.
- Put it in the oven to cook for six minutes.
- Take the pizza out of the oven, pile on the endive and arugula, huckleberries and parmesan cheese.
- Return the pizza to the oven and cook for another six minutes.
- Before serving, drizzle with olive oil and balsamic vinegar. Finish with a sprinkle of sea salt. ENJOY.
Now, one thing you may have noticed — this is a sauceless pizza. I happen to like the simplicity (especially since I like to make my own pizza crust and that’s one less thing I have to prepare) but if you really want something saucy, a nice white sauce might be good. Something creamy with a hint of garlic, maybe.
Also, you may be wondering about Kellan’s reaction. While his comments about the sweet Huckleberry Pizza were quite complimentary (”Mmm. Good.”) he did eat this version. He didn’t eat a ton of it, but he did eat it. So I’d consider that a success.
