Huckleberry Heaven

There are two things I love about living so close to the mountains: morel hunting in the spring and huckleberry picking in the summer. And this year, the huckleberry population is exploding!!!
These little berries are packed with flavor and antioxidant properties. They are rarely grown commercially, so your best bet is to get out into the higher elevations and look around. Sometimes you can find them at farmers’ markets, but they’re expensive — often selling for around 10 bucks a pound.
Did I mention the huckleberry bushes are exploding this year? Maybe it has something to do with our wet spring. I’m not sure. But I do know this — we didn’t have to walk far up our favorite mountain trail to find them last weekend. The bushes were laden with berries, and most of the them were quite large in size. Typically, huckleberries are about half the size of your average blueberry. But the ones we found could give blueberries a run for their money.
I have all kinds of yummy new recipes rolling around in my head for these little guys, so stay tuned. (Consider this a hint: you might want to track down some huckles in the meantime! You’re going to want to try them!)
