Grilled apples and sweet potatoes

This is a kid-friendly dinner! Minus the wine, of course.
When it comes to summer cooking, the easier the recipe the better, right? Grilled apples and sweet potatoes fit the bill. The sweet potatoes provide a generous dose of vitamin A, which is good for the eyes and skin. But perhaps more importantly, most kids will actually want to eat this easy side dish.
It combines a couple of non-traditional summer ingredients, which provides welcome relief on those long summer days when you’ve consumed somewhere around your millionth zucchini or tomato.
Grilled Apples and Sweet Potatoes
Serves 4
- 3-4 sweet potatoes or yams
- 2-3 apples (if they’re large, just use 2)
- 3-4 tablespoons olive oil
- 1 tablespoon nutmeg
- Set grill to medium heat.
- Lay two large pieces of aluminum foil crosswise, so they make an X.
- Wash and cut potatoes and apples into 2 inch chunks. (Peeling isn’t neccessary, but try to keep the chunks the same size so they’ll cook evenly.)
- Put potato and apple in center of aluminum foil. Sprinkle with nutmeg and drizzle with olive oil.
- Fold up the foil to create a pouch, being sure to seal it securely.
- Put the packet on the grill for 40-45 minutes, flipping once. When you start to smell them, they’re probably done!
We love this dish with a nice, veggie-laden, pre-made pasta salad (pictured above). When the meal’s over, you just toss the aluminum foil and all you’ve dirtied is a knife, cutting board, a few plates and forks. How easy is that?
