Curried Tofu Scramble

You don’t have to be a vegetarian to love this quick and easy meal. It is flavorful, satisfying and goes perfectly with a toasted whole wheat pita.
Kellan is quite used to the flavor of curry and the texture of tofu, but even I had my doubts that he’d take to this recipe. He ended up shoveling down his entire bowl, without skipping a beat.
I think the best part of this scramble is the caramelized onions. You can just saute them, but caramelizing them makes this recipe divine, so go for it if you have 15-20 minutes or so to let the onions cook.
Curried Tofu Scramble
- 1 tablespoon olive oil
- generous pinch of sea salt
- 1 teaspoon curry
- 1 teaspoon garam masala
- 1 medium onion, cut into thin slices
- 2-3 celery stalks, diced
- 1/2 cup frozen peas
- 1/4 cup dried cranberries
- 12 oz. package extra firm tofu, crumbled
- feta cheese to garnish
- 1/4 cup walnuts, roughly chopped
- Heat the olive oil in a large skillet over medium heat.
- Add the curry and garam masala and stir. Add the sea salt and onions. Allow onions to cook about 15-20 minutes, until they have darkened. Be sure to stir them frequently.
- Stir in the celery, frozen peas, dried cranberries and tofu. Cook until heated through.
- Remove from heat and spoon onto toasted pita bread. Top with walnuts and feta cheese.

Kellan is a better eater than Matt or I. Although, this looks really good and I think I’ll try it, however I know Matt will pick out the peas. I’ll remind him that Kellan, the 2 year old, eats all of his dinner.
