Cute. Kid-friendly. Vegetarian. Gluten-free. And vegan, if you want ‘em to be! Make a batch of these Golden Polenta Stars and give the kids their choice of dipping sauces — marinara, ketchup, ranch dressing or even salsa. These are delicious!

I….am…..exhausted. For two reasons.
1. I worked out this weekend. It wasn’t a really difficult workout — just a hike with some hills and a lot of downhills — but still. I’m sore.
2. I spent several hours wrangling a group of preschoolers.

We did plenty of short, fun hikes during our Oregon Coast vacation. The kind of hikes that inspire peace, reflection, inspiration….and IRRITATION at the most annoying typo of all time!

I planned for our recent Oregon Coast trip in much the same way a person might plan for an extended stay in a remote country. I tried to think of everything. Part of the road trip plan had to include a breakfast in the car that would be yummy, relatively mess-free, and toddler friendly. The result: Breakfast on a Stick.

We are back. It’s good to be home, but I did NOT want to leave the Oregon Coast. It was, in a word, HEAVEN. We had such a good time making sandcastles, going on hikes through the forest and just enjoying time together as a family. In fact, it was our first true vacation as a family of three.
