What is it about ice cream that makes me so nostalgic and reflective? Earlier this summer, a stop at our favorite ice cream shop took me on a trip down memory lane. Now, I have come to see the lesson in the gravest of ice cream accidents: a dropped scoop.

I spend a fair amount of time in the mountains in the summer, but I’m not really a girl who likes to “rough it.” What can I say — I like to hike around in the woods and be able to have a hot shower if I feel like it. So I don’t really see a whole bunch of wildlife besides the usual deer, squirrels and frogs. (Well, there was that one time I almost drove into the back end of a mountain lion. That’s another story.)

I’m not sure there is anything better in this world than starting a day with a plate of light, fluffy pancakes that are jam-packed with fresh huckleberries. The kind of pancake where every single bite explodes with huckleberry flavor.

Hummus is probably one of my favorite snacks. There are so many delicious versions in the grocery store, but I just can’t bring myself to buy them anymore. It is just too easy to make hummus at home, and it’s so much cheaper!

When I got asked to judge a local fundraiser called the Cupcake Collective, I think my sweet tooth hollered out “YEEEESSSSSSSS PLEEEEEEZE!” before I had time to think. (My sweet tooth is a living, breathing entity that speaks entirely on its own. It also has the ability to will my hand to pick up delicious goodies and shove them into my mouth. I swear, I have nothing to do with it.)

It’s all set! In a few weeks, we’ll be heading to the Oregon Coast for a nice family getaway. I’m already starting to think about what to pack, but more importantly, I’m thinking about how to survive our first big road trip.
We’ve never driven more than 3 hours with Kellan before. The trip we’re taking will average about 10 hours. Yikes.
